Smashed Avocado with creamy feta

Ingredients

Large ripe avocado
halved and stone removed
100
g
creamy feta
small handful fresh mint leaves
finely chopped
2
tbsp
extra virgin olive oil
juice of ½ a lemon
plus extra half for garnish
salt and freshly ground black pepper
to taste
Sourdough toast
to serve
fresh dill springs
for garnish
Instructions
Scoop out the avocado with a spoon and add to a bowl with feta. Roughly mash with a fork. You can make it as chunky or as smooth as you like.
Add mint along with olive oil, lemon juice
and salt and pepper. Mash and stir until It's all combined.
Spread on toast and Garnish with dill springs. Serve with extra wedge of lemon.
