Smashed Avocado with creamy feta

Ingredients

  • 1 Large ripe avocado halved and stone removed
  • 100 g creamy feta
  • small handful fresh mint leaves finely chopped
  • 2 tbsp extra virgin olive oil
  • juice of ½ a lemon plus extra half for garnish
  • salt and freshly ground black pepper to taste
  • Sourdough toast to serve
  • fresh dill springs for garnish

Instructions

  • Scoop out the avocado with a spoon and add to a bowl with feta. Roughly mash with a fork. You can make it as chunky or as smooth as you like.
  • Add mint along with olive oil, lemon juice and salt and pepper. Mash and stir until It's all combined. 
  • Spread on toast and Garnish with dill springs. Serve with extra wedge of lemon.
