Orange and Poppyseed cake

This delicious and moist orange and poppyseed cake is a real winner. With only a bowl and a whisk needed even the amateur cook can master this afternoon tea delight. Quick, easy and bursting with flavour.

Ingredients

  • 2 oranges zested and juiced
  • 50 grams unsalted butter melted
  • 1 cup caster sugar
  • 2 eggs lightly beaten
  • 1 cup self raising flour
  • cup full cream milk
  • 3 tbsp poppyseed's
  • icing sugar for dusting

Instructions

  • Preheat your oven to 180° or 160° for fan forced
  • Grease and line a 20cm cake tin with baking paper
  • In a large bowl add the zest, butter, juice, sugar, eggs, flour and milk and whisk until combined.

  • Add the poppyseeds and continue to whisk for a few more seconds.

  • Pour batter into prepared tin and bake for 35 minutes or until a skewer inserted in the centre comes out clean. leave to rest for 5 minutes before turning out onto a wire rack to cool.
