This ridiculously good hearty meatball soup will warm you up from the inside out. Packed with vegetables, tiny pasta and oh so good meatballs will be a winner for the whole family.

Ingredients
Meatballs
500gbeef mince
small bunch parsely finely chopped
½cupparmesan grated
salt and pepperto season
For the soup
1tbsolive oil
1brown onion finely diced
1leektrimmed, thinly sliced
1stick celerydiced
1carrotchopped
1zucchinichopped
1litrechicken stock
1cuppastinasuch as little stars or other tiny pasta shapes
60gbaby spinach
Instructions
For the meatballs
Place all ingredients in a medium size bowl and mix well with your hands to combine. Roll into small balls, place on a plate and set aside.
For the soup
Heat oil in a heavy based pot.Add onion and leek and sweat it out until the leak is soft (around 8 minutes)
Add the celery, carrot and zucchini and saute for 2 minutes.
Add the meatballs and carefully cook, for 2 minutes turning gently and being careful not to let them break.
Pour in stock and bring to boil. Once boiling, add the pasta and a pinch of salt. cook for 6 minutes or until pasta and the meatballs are cooked.
Remove from heat and stir in spinach.Ladle generous serves into bowls.
