Ingredients
2skinless chicken breastshalved
1tbsolive oil
1tspdried cumin
1tspground coriander
1tspdried oregano
1tspsalt
1lemonzested
4Burger Buns
1ripe avocadomashed
4slices cheddar cheese
¼red onionthinly sliced
4iceburg lettuce leaves
Instructions
Place the chicken in a bowl with the olive oil, spices, salt and the lemon zest and rub all over until the chicken is evenly coated.
Heat your griddle pan or BBQ. Once hot, cook chicken for about 4 minutes on each side or until cooked through. Transfer to a plate, cover with foil and allow to rest for 5 minutes.
Slice open your burger buns and prepare your burger toppings; smash the avocado with a little olive oil, salt and pepper. Slice the tomato and thinly slice the red onion.
To assemble the chicken burgers layer the buns with lettuce, grilled chicken, tomatoes, onion, avocado and cheese. Enjoy!!!
