Ingredients
50gbutter
10 sage leaves
12lettuce leavesrolled up and thinly sliced
3spring onionstrimmed and thinly sliced
1cupfresh or frozen peas
¼cupvegetable stock
2tbspflat leaf parsleyfinely chopped Heat butter in a large pot or sauté pan over medium heat. Once foaming add the sage leaves and cook for a minute or until the leaves are crispy and golden.

Heat butter in a large pot or sauté pan over medium heat. Once foaming add the sage leaves and cook for a minute or until the leaves are crispy and golden.
Scoop out the leaves with a slotted spoon and drain on paper towel. Set aside until needed.
Add the lettuce leaves, spring onion, peas and stock to the pan. Season well with salt and pepper. Cover with a lid and simmer on low for 10 minutes or until peas are cooked.
The peas are cooked when they are tender but still bright green in colour. Stir through parsley.
Transfer the peas to a serving dish and top with the crispy sage.
