Heat oil in a large frying pan or skillet over medium heat. Add onion and garlic cooking for 2 or 3 minutes until softened. Then add the carrot and cook for a few more minutes.
Next add mince and cook until browned. Add curry powder and stir well to combine.
Add stock and cabbage and cook until the cabbage has wilted and the carrots have softened, about 10 minutes.Season with salt and pepper.
Serve with steamed rice.
