Chocolate chunk oat cookies

The best chocolate chunk and oat cookies. Crisp edges with soft and chewy centres make these cookies irresistible. No dough chilling required.

Ingredients

  • 125 g butter unsalted
  • 1 cup dark brown sugar
  • 2 eggs
  • 1 cup self raising flour
  • 1 cup plain flour
  • ¾ cup rolled oats
  • 150 g dark chocolate roughly chopped
  • 150 g milk chocolate roughly chopped

Instructions

  • Preheat your oven to 180° or 160° for fan forced. Line 2 oven trays with baking paper.
  • In an electric mixer, beat butter, sugar and eggs until smooth and creamy. 
  • Stir in flour, self raising flour, dark and milk chocolate. Mix until well combined. 
  • Roll tablespoons of the mixture into balls and flatten slightly. Place on prepared trays 5cm apart. 
  • Bake for 12-14 minutes or until just starting to turn golden. Allow to cool slightly before transferring them to a wire rack to cool completely.
