Making authentic Pad Thai noodles at home just got a lot easier with this quick and easy recipe.

Ingredients
2tbspalm sugar
1tbsfish sauce
2tbstamarind paste
1tbschilli flakes plus extra for serving
2tbsvegetable oil
1garlic clovecrushed
2eggslightly beated
500gchicken breast cut into thin strips
1small head of broccolicut into small florets
125gflat rice noodlescooked as per packet instructions
1cupbean sprouts
¼cupspring onionthinly sliced
2tbsfinely chopped toasted peanuts
small bunch coriander to serve
1limecut in wedges to serve
Instructions
In a bowl, mix palm sugar, fish sauce, tamarind and chilli together to form your sauce.
Add oil to a large wok on high heat. Add garlic and stir for 1 min. Continue to stir and toss so that it doesnt catch and burn. Add the egg and keep stirring until cooked, set aside.
Next add chicken and broccoli toss until chicken is cooked.
Add cooked noodles, egg, sauce, bean sprouts and spring onion. Toss for another minute or so until everything is heated through.
Serve up with roasted, chopped peanuts, the extra chilli, lime wedges and coriander
