Authentic lamb kofta kebabs
These moorish lamb kofta kebabs are an authentic Middle eastern dish thats makes a delicious and easy dinner any night of the week. Perfect for stuffing in flat bread with tabouli, hummus and a dollop of tzatziki.

- 500 g lamb mince
- 1 large garlic clove crushed
- ¼ cup pistachios roughly chopped
- ¼ cup parsley finely chopped
- ¼ cup mint finely chopped
- 1 tbs fresh thyme leaves
- 2 tsp cumin
- 2 tsp ground coriander
- 2 tsp paprika
- 2 tsp sumac
- ½ tsp ground cinnamon
- 3 tbs olive oil for frying
Place all the ingredients in a large bowl along with a good pinch of salt and pepper and mix with your hands until well combined.
Using damp hands, divide the mixture into 12 equal kofta's. You can either mold them around BBQ skewers or leave as is.
Heat the oil in a frypan over medium-high heat.Cook the kofta's in batches if needed for 8-10 minutes or until golden all over and cooked through.
*If lamb is hard to find, beef mince can also be used
*Pistachios give a wonderful flavour and crunch but if you don't have these or if there is a nut allergy in your family the koftas will still taste great without them!
*Serve with flatbreads, tabouli and hummus if desered or great on their own with a zesty Greek salad.
