Ingredients
500gDried spaghetti
1Oniondiced
3Cloves garlicpeeled and thinly sliced
400gBaby spinach leaves
500gFresh ricotta
Instructions
Bring a large pot of salted water to the boil. Add pasta and cook according to the packet instructions.
Meanwhile heat 1 tablespoon of olive oil in a large fry pan over medium heat. Add onion and cook for 2 minutes. Add garlic and cook for another 2 minutes or until onion has softened.Add spinach and cook until wilted. Add ricotta and cook for 2 minutes until well heated.
Using tongs, remove the spaghetti from the cooking water and transfer straight to the ricotta mixture. Add a splash of cooking water and a drizzle of olive oil and gently toss the pasta through the sauce until well combined. Add more cooking water if It’s too thick.
