I work three days a week and two of those days I’m commuting to and from the city and I don’t get home until around 5:30pm. I’m welcomed by my husband and three hangry children asking me the golden question;
“WHATS FOR DINNER?”
Those three words are exactly what inspired me to become a food blogger!!

On those working nights pasta is our go to. Simply because Its quick, It’s easy and the kids won’t complain. (No three outranks the other 2 points)
I’m usually well stocked with bolognese sauce and pesto in my freezer but over the weekend when I did my usual open and grab in the freezer I was all out.
Thats when this recipe saves the day! I love how quick and easy it is to prepare. the sauce literally comes together while the pasta is cooking and you have dinner on the table in 15 minutes.
It just does not get any easier than that! It’s loaded up with spinach too so It’s a healthy dinner the whole family will love.
What you should know
- In my recipe I have used spaghetti but you can use any type of fresh or dried pasta including fettuccini, ravioli, pasta shells or penne.
- The recipe also works well as a pasta bake. Just cook the pasta for a minute or 2 less and after you combine the sauce transfer the pasta to a baking dish, top with grated mozzarella and parmesan and bake until golden.
- This recipe is great for meat free Mondays and is a nutritious vegetarian dish.
- You can use firm or smooth ricotta.

- Dried or fresh Spaghetti
- Onion
- Garlic
- Baby spinach leaves
- Fresh ricotta
What is ricotta?
I am a cheese fanatic and ricotta is one of my favourites.
Ricotta which translates to re cooked is a soft white Italian cheese. Ricotta is traditionally made by reheating whey that is leftover from making other cheeses. You can make it yourself at home using milk.
The whey or milk is acidified by adding lemon juice or vinegar and as it is heated to almost boiling point the proteins will clump together and form curds. Then you have fresh ricotta!
Ricotta cheese is extremely versatile as it can be used in savoury dishes as well as desserts.
Not only can ricotta be used for cooking It’s also delicious eaten fresh, spread over crusty bread with pesto or served with fresh tomato salad
How to make spinach and ricotta pasta
Bring a large pot of salted water to the boil. Add pasta and cook according to the packet instructions.
Meanwhile heat olive oil in a large fry pan over medium heat. Add onion and cook for 2 minutes before adding the garlic and cook for another 2 minutes or until onion has softened.
then add spinach and cook until wilted.
Finally add ricotta and cook for 2 minutes until well heated.
Using tongs, remove the pasta from the water and transfer straight to the ricotta mixture. Adding a splash of cooking water and a drizzle of olive oil gently toss the pasta through the sauce until well combined. Add more cooking water if It’s too thick.
It does not get any easier than that! A delicious and healthy dinner on the table in 15 minutes. Perfect for your meat free Mondays and a great vegetarian dish to have on hand.

Ingredients
- 500 g Dried spaghetti
- 1 Onion diced
- 3 Cloves garlic peeled and thinly sliced
- 400 g Baby spinach leaves
- 500 g Fresh ricotta
Instructions
- Bring a large pot of salted water to the boil. Add pasta and cook according to the packet instructions.
- Meanwhile heat 1 tablespoon of olive oil in a large fry pan over medium heat. Add onion and cook for 2 minutes. Add garlic and cook for another 2 minutes or until onion has softened.Add spinach and cook until wilted. Add ricotta and cook for 2 minutes until well heated.
