I need to change the title of this post to the BEST EVER Crispy pork Bahn mi rolls!!!

I want to show you how you can take leftovers from your Sunday roast pork to a whole new level!! Bahn mi rolls are a Vietnamese street food bursting with classic flavours of fresh herbs, pickled vegetables and chilli.

A few years back a small Vietnamese bakery opened up at my local Shopping centre and this is when I first discovered Bahn mi rolls!! I was so glad I did! Crunchy baguettes with thickly spread pate, pickled carrots, slices of crisp cucumber, fresh coriander and if your game, chilli. Their chilli is home grown and packs a punch. The kind of punch that makes you cry! like a baby! hahah. So I usually only get a tiny amount and that is still a huge punch.

Bahn mi

Bahn mi is a traditional Vietnamese sandwich that is typically sold as street food. Crusty bread rolls or baguettes are the base of these sandwiches.

Traditionally made with a type of Asian ham however roast pork bahn mi rolls have become equally as popular and in my opinion much more tastier.

The richness of the pork paired with the freshness of the herbs and pickled carrot with a sprinkling of chill makes these sandwiches truly Devine.

The Pork

Then theres the star of the show, the pork, the crispy delicious pork! So every bite of that roll just leaves you wanting more!
Everyone loves a good pork roast with melt in your mouth meat and crispy pork crackle. This is the basis of a pork Bahn mi roll. So first things first you need to perfect your pork!

Ok so here is what you will need to make your very own Vietnamese pork bahn mi rolls at home:

  • Two crusty baguettes; You can find the traditional Vietnamese baguettes at your local Vietnamese bakery. If you don’t have one near you don’t stress any crunchy white long rolls will still give you a great result.
  • Pate; you can use duck, pork or chicken pate and you can use store bought.
  • Mayonnaise; this adds a good moistness to the rolls as well as helping to cool down those chillies. I use a whole egg mayo as its thick and creamy and so delicious.
  • Pickled carrot; It’s very simple to make and adds a nice flavour and crunch to the rolls.
  • Fresh coriander, spring onion and chilli; This gives the freshness you need in contrast to the richness of the pork and the pate
  • Roast pork; like I said this roll is perfect for using leftovers. If you are lucky to have any left of course!
  • Light soy sauce just a little drizzle over the top to give an extra boost of flavour. You don’t want too much or your rolls will be too salty.

How to make pickled carrot

Pickling carrots gives them a salty/sweet/slightly bitter flavour that goes perfectly with the richness of roast pork.

Pickled carrots can be used in salads, noodles and even eaten as a snack. It’s also a really clever trick to preserve your carrots when you just don’t know what to do with those carrots at the back of your fridge.

For this recipe the carrots need to be cut into thin match sticks or julienned. If you have a julienne peeler this is so easy to do. If not you can use a sharp knife to cut into thin matchsticks.

Here is what you will need

In a small saucepan add sugar, vinegar and salt and cook over medium heat for 5 minutes or until sugar dissolves. Remove from heat and allow to cool. Add carrot and toss to coat.

Leave for 20 minutes and then drain excess liquid. the carrots will keep in a sealed container for a good few months.

Assembling your bahn mi Rolls

Assembling the roll is too easy and you go about it like you would any other roll or sandwich. Cut the rolls in half lengthways and spread your pate on one half of the roll and the mayo on the other. Working in layers, add pickled carrot, coriander, spring onion and chilli (if using). Be generous with the roast pork and be sure to get some of that crispy crackle in there. you want to hear that crunch from a mile away! Finally add a drizzle of soy sauce.

Now chose the other lucky person, or people who get to share this with you!!! Go on and give your roll a good squash with both hands and take your first big bite!! I can hear that crunch from here hahah!!

Crispy Pork bahn Mi Rolls (Vietnamese sandwich)

Make the vietnamese classic bahn mi at home with leftover pork from your Sunday roast. The crispy pork, fresh herbs and the pickled carrot make these rolls irresistable.

Ingredients
  

  • 2 crusty, white, long bread rolls cut in half lengthways
  • 20 grams pate can use duck, chicken or liver
  • 2 tbsp whole egg mayonnaise
  • 1 small lebanese cucumber sliced thinly, lengthways
  • 100 grams leftover roast pork thinly sliced
  • 1 birds eye red chilli thinly sliced (optional)
  • 6 springs Coriander leaves picked
  • 1 spring onion thinly sliced on the diagnal

For the pickled carrot

  • 1 carrot peeled, cut into matchsticks
  • ¼ cup white sugar
  • ¼ cup rice wine vinegar
  • ½ tsp sea salt

Instructions

  • In a small saucepan add sugar, vinegar and salt and cook over medium heat for 5 minutes or until sugar dissolves. Remove from heat. Allow to cool. Add carrot and toss to coat. Leave for 20 minutes and then drain excess liquid.

For the rolls

  • Spread pate over one half of each roll.
    Spread the other half of the roll with mayonnaise.
    Pile on the pickled carrot, cucumber and pork.
    Top with chilli, coriander and spring onion and enclose the rolls.
    Enjoy!!!
