Dinner could not possibly get any easier than this one pan oven baked fish. It’s one dish, 4 ingredients and 15 minutes to delicious, juicy and flaky fish.

Iv’e used gummy shark fillets but this recipe works with any fillets of fish.

The fish of course is the star of the show but the lemon and fennel are great supporting acts. There’s something about combining theses three ingredients that works so well together. The lemon provides the zest and the fennel gives a wonderful aniseed flavour that just compliments the fish perfectly.

Presentation wise the lemon and fennel make the fish look really pretty and I serve the fish straight from oven to table and let everyone dig in and grab a portion.

The secret to making this dish extra special is adding a few nobs of butter for the last 5 minutes of cooking. The butter melts into the fish leaving it incredibly moist and juicy.

My kids aren’t big seafood eaters, but fish they do enjoy. The kids are always happy with oven baked fish for dinner. I think It’s because It’s so tender making it so easy for them to eat.

One pan oven baked fish

This is a really basic recipe for making baked fish.

Using one pan to cook your fish as well as any veggies locks in the flavour and not only looks pretty it saves on cleaning up too!

Don’t have any fennel? No worries why not add some cherry tomatoes or asparagus?

White fish is mild in flavour and so It’s great if you aren’t a huge seafood fan. It’s also great for kids.

The fish is perfectly served with a Greek salad or orange and fennel salad.

Which fish is best for baking?

Any flaky fish works well for baking. I have used gummy shark here but you can you can use many other varieties such as:

  • Flake
  • snapper
  • salmon
  • bass
  • haddock
  • cod
  • sea bass

What you will need for one pan oven baked fish

To make this you are only going to need a handful of simple ingredients.

This is what you will need:

  • White fish fillets of your choice (Iv’e used gummy shark)
  • Lemon
  • Fennel; I have used the tops only but you can use the whole fennel. If you can’t find fresh fennel then you can use dried fennel
  • Butter
  • Salt pepper and olive oil to season

How to make this one pan oven baked fish

This is such an easy recipe. Here is what you need to do to recreate this tender baked fish.

Pat your fish dry with paper towel to remove any excess moisture.

Lay the fish in an oven dish. Season well with salt and pepper.

Arrange the lemon slices and the fennel over the top of the fish.

Drizzle it all with a generous amount of extra virgin olive oil.

Put the dish in the oven for 10 minutes. Remove from oven and add a few nobs of butter. Return to the oven for 5 minutes.

Check to make sure the fish is cooked through. Depending on the thickness the cooking time may vary slightly.

What to serve with baked fish

Here is a list of my favourite sides that I love to serve baked fish with:

  • Lemon and herb rice (simply cook your rice as per normal; add 1tbs olive oil, juice of 1 lemon and 3tbs of finely chopped fresh herbs such as parsley, mint and dill. Mix through your rice with a fork to fluff it up and avoid mushing it.)
  • Leafy greens such as Bok choy, silverbeet or spinach
  • Crusty bread
  • Wedges of sliced fennel
  • crispy oven baked potatoes
  • Orange and fennel salad

Is it better to bake fish covered or uncovered

Depending on the recipe it may instruct to cook the fish covered in foil or baking paper. This creates a parcel around the fish and locks in the steam. I love using this coking method for cooking oven baked salmon.

For this recipe cooking the fish uncovered speeds up the cooking process and adding the butter towards the end of the cooking time keep the fish really moist.

How to tell if your fish is cooked

When you remove the fish from the oven the easiest ways to tell if its cooked is firstly; it should be white in colour and no longer have that translucent look. Secondly using a fork gently push down onto the fish at the thickest point. If it flakes easily then it’s cooked.

Dinner is a breeze with this one pan oven baked fish. Just throw in your ingredients, bake for 15 minutes and out comes succulent juicy fish. Yum!

Ingredients
  

  • 800 g white fish fillets boneless (Ive used gummy shark)
  • 2 lemon 1 finely sliced the second juiced
  • 1 bulb fennel (top part only trimmed and sliced)
  • 1 tbs extra virgin olive oil
  • 50 g butter cut into cubes

Instructions
 

  • Preheat oven to 200°
  • Pat fish dry with paper towel and lay flat in a baking dish. Season generously with salt and pepper.
  • Arrange the lemon slices over the fish followed by your fennel tops.
  • Drizzle over the extra virgin olive oil .
  • Bake for 10 minutes, remove from oven and add the butter. return to the oven for a further 5 minutes or until your fish is cooked through.
  • Serve with rice, greens and crusty bread

*Ive used gummy shark but any flaky fish will work well. 
*Cooking time may vary slightly depending on the thickness of the fillets.
