Easy & delicious meatball soup
Im going to tell you why you want to make this easy and delicious meatball soup for dinner tonight!
Picture this OK! You are sitting at the dinner table as a family (even the youngest is sitting quietly!) you have made a pot of Meatball Soup. Your kids are eating hungrily and when their bowls are empty they ask for “more please!” Your husband then replies as he ladles seconds into his bowl “babe you really need to make this again” BANG! This is when you know you did good!
Soup can be touch and go with my kids. All three will chow down bowls of creamy pumpkin soup. however, when I start to add textures it can be hit or miss. So when I can make a healthy soup that at least the majority of them will eat I run with it. So in other words I hit the jackpot with this easy and delicious meatball soup!
I’m always looking for ways to add veggies into the kids diet and soups are an excellent way to load them in. I add in some small pasta to beef it up so together with the meatballs its a hearty and super satisfying meal.
Why this meatball soup is so easy!!
There are three elements to this delicious meatball soup; the vegetables, the meatballs and the pasta. First of all you can use whatever vegetables you have. Feel free to mix it up and veer from the ones in my recipe.
Second is the meatballs, its as simple as adding beef mince, parsley, egg, S&P and parmesan and rolling into balls. Its the parmesan that makes these meatballs so ridiculously good!
Lastly the pasta; This transforms the soup into a robust meal and fills up their little tummies! If you don’t want pasta you could also use brown rice, pearl barley or farro.
So when your stuck in that soup rut and your looking to jazz it up this is your new go to!! Seriously, when something so healthy tastes so damn good you need to make this like right now!

Hearty meatball soup
Ingredients
Meatballs
- 500 g beef mince
- small bunch parsely finely chopped
- ½ cup parmesan grated
- salt and pepper to season
For the soup
- 1 tbs olive oil
- 1 brown onion finely diced
- 1 leek trimmed, thinly sliced
- 1 stick celery diced
- 1 carrot chopped
- 1 zucchini chopped
- 1 litre chicken stock
- 1 cup pastina such as little stars or other tiny pasta shapes
- 60 g baby spinach
Instructions
For the meatballs
- Place all ingredients in a medium size bowl and mix well with your hands to combine. Roll into small balls, place on a plate and set aside.
For the soup
- Heat oil in a heavy based pot.Add onion and leek and sweat it out until the leak is soft (around 8 minutes)
- Add the celery, carrot and zucchini and saute for 2 minutes.
- Add the meatballs and carefully cook, for 2 minutes turning gently and being careful not to let them break.
- Pour in stock and bring to boil. Once boiling, add the pasta and a pinch of salt. cook for 6 minutes or until pasta and the meatballs are cooked.
- Remove from heat and stir in spinach.Ladle generous serves into bowls.
