French-Style Peas
This is my take on the classic French-style peas. Adding crispy sage leaves for a lovely flavour and texture. The recipe is so quick and easy to prepare and It’s a totally delicious way to eat your peas.
Lets face it peas can be dull and they can be bland but life is just too short to be eating boring. What if I told you that in 15 minutes you could serve up a bowl of nutritious peas. A bow of peas that your other half is going to compliment you on and a bowl of peas that the kids will actually eat!
French-style peas are pretty wonderful because they are full of so much flavour. By adding crispy sage into the mix it just gives it that extra deliciousness.
Peas are great because they can pretty much be served with anything! My favourite dishes to serve these French peas with are creamy chicken pie, Osso buco, beer battered fish and even crispy fried chicken.

French-style peas
French-style peas also known as petitis pois a la Francaise are a classic French dish made by braising peas in a stock with with finely chopped lettuce onions and fresh herbs.
The first time I heard of this technique of cooking peas with lettuce I thought it was quite odd but the truth is it doesn’t taste soggy at all. Cooked lettuce actually tastes really good. It’s also lovely to use for split pea soup.
Frozen peas are not only great for using as an iced pack to bumps and scrapes. They are snap frozen and retain all the same vitamins and minerals as fresh peas.
Either fresh or frozen peas can be used for this recipe. The cooking time will remain the same.
What you will need
Butter
Sage leaves
Lettuce leaves (iceberg or cos lettuce is ideal)
Spring Onions
Peas
Stock
Parsley
How to make French-style peas with crispy sage
Heat butter in a large pot or sauté pan over medium heat. Once foaming add the sage leaves and cook for a minute or until the leaves are crispy and golden.
Scoop out the leaves with a slotted spoon and drain on paper towel. Set aside until needed.
Add the lettuce leaves, spring onion, peas and stock to the pan. Season well with salt and pepper. Cover with a lid and simmer on low for 10 minutes or until peas are cooked.
The peas are cooked when they are tender but still bright green in colour. When the peas go wrinkly they are overcooked. Stir through parsley.
Transfer the peas to a serving dish and top with the crispy sage.
How long will the peas keep
The peas are best served still warm. Store any leftover peas in a container in the fridge. I store my leftovers in glass pyrex containers with lids. these are great for fridge, pantry and the freezer and they are dishwasher safe.
Cooked peas will keep well in the fridge for 3-4 days.
