Christmas Tiramisu
This is my easy tiramisu recipe because sometimes It’s the simple things that are the most stunning.
I love this easy tiramisu recipe because it incorporates coffee soaked sponge biscuits, sweetened cream and chocolate. whats not to love about that right!
what’s better is that this dessert can be made ahead of time. In fact Tiramisu continues to intensify in flavour as the biscuits soak up the coffee and liquor! So if Christmas Day is at your house and your to do list is as long as your 5 year olds Christmas list then this is a perfect dessert!
What is tiramisu?
So you have probably heard of the name but you may not be 100% sure what it actually is. Tiramisu is a traditional Italian coffee flavoured desert using savoiardi biscuits soaked in coffee, with layers of cream. The translation for tiramisu is “pick me up” or “cheer me up” more so because the dessert is traditionally flavoured with liquor. however, If Im making a family friendly version I will leave this out.
I love making this dessert at Christmas time because in Melbourne the weather is so unpredictable it could be hailing or it could be 40 degrees! I love that there is no cooking involved! Its kept in the fridge until serving time and it’s deliciously refreshing.
what you will need for my Christmas Tiramisu
- Savoiardi biscuits: these are now readily available at your local supermarket. If you have any leftover they are so delicious served with espresso coffee.
- 500ml sweetened hot espresso coffee: If you have a coffee machine its going to take a few shots to get to 500ml so we usually use a traditional caffatiera but you could also use a plunger.
- liquor ( if using) I like to use Frangelico which is a hazelnut flavoured liquor.
- 200g dark chocolate: Jamie Oliver said it right! coffee and chocolate make a great match and so I used his idea of adding a layer of chocolate in between my coffee soaked biscuits. The chocolate hardens when you leave it in the fridge and it creates a wonderful texture and flavour to the tiramisu.
- 4 large eggs at room temperature
- caster Sugar for sweetness
- Mascarpone cheese is essentially an Italian cream cheese. Its sweet and light.
- Cherries and extra chocolate to shave and use for decoration. The cherries add a lovely Christmas feel.
Steps to making this easy tiramisu recipe
1/ The tiramisu can be presented in a deep glass dish or trifle bowl. Start by brewing your espresso coffee. Sweeten with sugar and then leave to cool.
2/ Dip the savoiradi biscuits into the coffee and leave to soak for a few seconds before removing and placing into your dish. Repeat until the bottom of the dish is lined with the biscuits. Drizzle over some of the liquor if you are using.
3/ Next you prepare the chocolate layer by melting the dark chocolate in a heatproof bowl over simmering water. Make sure the water does not come in contact with the bottom of the bowl. pour the melted chocolate over the biscuits and use a spatula to evenly coat the biscuit.
3/ Seperate you eggs and place the egg yolks in a bowl of an electric mixer together with the sugar. Whisk until the sugar has dissolved and the eggs are pale and fluffy. Fold in the mascarpone.
4/ Using a clean bowl and whisk, whisk your egg whites with a good pinch of salt until stiff peaks form. It should continue to hold It’s shape after you remove the whisk.
4/ Transfer a spoonful of the egg whites to the yolk mixture and fold through. Repeat until all the egg whites are combined.
5/ Spread half of the mixture over the biscuits then arrange another layer of coffee soaked savoiardi over the cream (with another drizzle of liquor) then top with remaining cream mixture. Using a spatula to ensure an even coverage.
6/ Grate over some extra dark chocolate and top with cherries. Place in fridge for minimum of 2 hours but preferably overnight.
