Chicken and Broccoli Stir fry with Soba Noodles

No time to cook tonight? No worries! I’ve got you covered with this easy Chicken and Broccoli stir fry.

Its a no fuss, no frills stir fry that will get you excited about Monday’s dinner (or Tuesday, Wednesday, Thursday or Friday!) If your short on time but want to get something healthy and delicious on the table this is your new back pocket recipe!!

Iv’e just discovered Soba Noodles! how awesome are they!! They made from buckwheat flour so they are better for you. For this recipe I used the Hakubaku soba noodles and apart from having a really cool brand name they are organic and made right here in Australia. You can get these from your local supermarket in the noodle section. Soba noodles are great for stir fry’s, salads and soups.

What you need to recreate this delicious stir fry with soba noodles.

  • Spring Onions: I use the whites for the base of the stir fry as they bring a nice sweetness. then I slice the green tops on a diagonal for garnish.
  • Garlic, ginger, lemongrass: I use these both for the stir fry and also to marinade the chicken. To save time I use the gourmet garden ginger and lemongrass paste.
  • Soy and oyster sauce: Lots of flavour and a bit of saltiness from the sauces.
  • Chicken thighs: I prefer to use thighs because they are so tender and juicy. No one wants dry chicken in their stir fry!
  • Broccoli: Its packed with vitamins, a great source of folate and fibre.
  • Thai Basil: You can substitute with regular basil.
  • Peas: just to up the greens I blanch some peas and add them in towards the end of the cooking so they still keep their vibrant green colour.
  • Soba Noodles: They are healthier than regular noodles but If you like you can substitute with brown rice or rice noodles.

How to prepare the Noodles

Now that all the ingredients are prepped the hard work is done. The actual cooking part is super fast! The noodles are so easy to prepare and just need to be cooked in boiling water for 3 minutes! So I do this right at the end and then I use tongs to transfer the noodles straight from the pot to the wok. The extra water helps to give you sexy glossy noodles!!

Once you have the base of this recipe you can make it with whatever vegetables you have in your fridge. So next time you are in a recipe rut and short on time, you now have this recipe up your sleeve!!

Chicken and Broccoli stir Fry with Soba Noodles

This quick and easy stir fry is perfect for your next weeknight dinner. When your short on time and looking for something healthy and delicious give this a try!

Ingredients

  • 270 g packet dry soba noodles
  • 800 g chicken thigh fillets sliced into 3
  • 3 tbs soy sauce
  • 3 tbs oyster sauce
  • 2 tsp grated ginger
  • 2 tsp grated lemongrass
  • 2 cloves garlic crushed
  • 3 spring onions white parts sliced, greens sliced on diagonal for garnish
  • 1 head broccoli cut into florettes
  • small bunch thai basil leaves picked

Instructions

  • Fill a medium pot with water and bring to the boil.
  • Place chicken in a large bowl with 1tbs each of soy and oyster sauce, 1tsp each of ginger and lemongrass and one clove crushed garlic. Rub well into chicken.
    Heat 1tbs oil in large wok on high heat. Add chicken and cook tossing frequently until cooked through. remove from wok and place in a clean bowl with the juices and cover with foil.
  • Add another splash of oil to wok and add spring onion, remaining ginger, lemongrass and garlic and stir fry for few minutes. Add broccoli and a splash of water and stir fry for two more minutes. add thai basil and stir through.
    once the pot is boiling add soba noodles and cook for 3 minutes
  • Return chicken and the juices to the wok. Using tongs, transfer the noodles directly into the wok. Add remaining soy and oyster sauce and toss gently. Add a splash of water if needed.
  • Serve with the sliced green part of the spring onion.
