Crispy Oven Baked Potato Chips
The definition of the perfect chip; crispy on the outside, soft and fluffy on the inside. So moreish, these crunchy oven baked potato chips are chip perfection. The best part is, they are baked and not deep fried in oil.
Even as I type todays blog post I am literally salivating at these chips. They are my weak spot, so thank goodness they are healthy! Well as healthy as it gets when it comes to potato chips. The perfect pairing to my healthy oven baked beef burgers. It changes the way we think about burgers and chips. They don’t have to be loaded with calories.
It’s a misconception that oven baked chips don’t have the same crunch factor as deep fried chips. I am not talking about the frozen processed chips. I’m talking about old fashioned hand cut chips! These are a whole different ballgame and they have the CRUNCH factor.
Home made is always better than store bought.
I have such lovely memories of my Nonna, in her kitchen while she peeled potatoes one by one, carefully sliced, drying and preparing them for frying. She would pair them alongside fried eggs, sunny side up. We would use the fried chips as little soldiers to soak up the runny yolks. As a kid you don’t think about calories and god fats and bad fats just what tastes good.
I now make this same meal for my kids but baking the chips instead of frying. It still takes me back to those moments in my grandmothers kitchen. They are just as good!
My kids go crazy for these chips just like I did but I feel somewhat better serving baked chips to them, than I would if they had been deep fried.
Crispy Oven Baked Potato Chips
There are no secret ingredient or fancy tricks to making oven baked chips extra crispy. It’s all in the prep work.
Over the years I have tried various different techniques and Iv’e added extra steps but I find that this method gives me the best results.
I know what your probably thinking; Marie, this is all well and good but I Just don’t have the time to do 10 different steps when I could reach into my freezer or call into my local fish and chip shop.
Don’t fear because there most definitely is not 10 different steps.
This is a simple, foolproof recipe to getting you the best crispy potato chips. Don’t just take my word for it, get these babies into your oven and be the judge yourself. What’s the worst that could happen? You could end up being totally addicted to them just like me!
Which potato varieties are best for making chips
There are three main types of potatoes; starchy, waxy and floury.
Starchy potatoes are great for deep frying and mashing, waxy potatoes hold their shape well so they are great for soups and salads.
Floury potatoes are your best bet for making oven baked potato chips. They have a good amount of starch and a lower water content. These include Desiree potatoes, Yukon gold and purple potatoes.
Sweet potatoes are also great to use and you can check out my beer battered fish with oven baked sweet potato chips. The recipe to rival that of your favourite fish and chip shop. Balanced out with baked potato chips.
What you will need for these oven baked potato chips
- Desiree potatoes
- Garlic
- Olive oil
- Sea salt flakes and pepper (cooking salt is also fine)
As you can see the ingredients could not be simpler. These are staple ingredients that I bet you have on hand right now.
Tips for the best Crunchy potato chips
- The trick is to place the potatoes in cold water and slowly bring them to the boil. Blanching them in boiling water will cook the chip on the outside only, leaving them hard in the centre.
- Shake, rattle and roll; giving the potatoes a really good shake up in the pot before transferring them to your oven is the key to crispy perfection. Shaking them makes them rough around the edges and this is what will be the delicious gnarly bits. #drooling
- Be careful not to overcrowd the oven tray, you want to give each chip enough room to fully crisp up.
How to make Crunchy Oven Baked Potato Chips
Peel and slice the potatoes into 1cm thick strips. Place potatoes in a medium size pot and cover with fresh cold water so that the potatoes are fully submerged.
Bring potatoes the boil and cook for 5 minutes.
Drain well and leave to air dry for a few minutes.
Tip the potatoes back into the pot along with the garlic cloves, a generous glug of olive oil, sea salt flakes and pepper. Place the lid on the pot and give the potatoes a really good shake.
Transfer the potatoes to the prepared oven tray, spreading them out evenly and being mindful not to overcrowd the tray.
Place in oven and cook for 10 minutes or until they start to turn golden. Give the tray a good shake then return to the oven.
Turn up your oven to the highest heat and cook for further 5 minutes to crispen up further.
You now have the perfect potato chip!
Seasoning
I love the chips with a good sprinkle of sea salt flakes but you can experiment with many different seasonings. You can season your potatoes before or after you bake them.
If seasoning them before baking ensure you add the seasoning at the same time you add the olive oil so the seasoning is also well coated. Otherwise the seasoning is going to burn.
Does this work for fries
This technique sure does work for fries too! Simply follow the exact same recipe, cutting the potatoes into thinner strips. Then instead of boiling the chips for 5 minutes I would only boil them for 2 minutes.
