These blueberry scones are going to blow your mind!
I had a friend call me the other week to say she was going to drop by with her husband and kids in the afternoon. Already my head was swooning with questions….where would Joe be? Did we have anything on that morning? Would it give me enough time to clean the house? What will I make for afternoon tea? Does anyone think like this or is it just me?
Look, I love entertaining and I love having friends and family over to share my cooking and baking with. Its just a little more stressful now days then when we first got married. Plus I’m just a little OCD when it comes to my house being clean and everything being perfect. When in reality I have three kids, I work 3 days a week, plus my blog as well as being a cook, a cleaner, an Uber driver, a mediator and a therapist. Just like the rest of us Super mums! So if you are like me, and your running around like the crazy lady in the spray n wipe commercial before visitors come around your going to love my blueberry scone recipe.
Why I am loving these blueberry scones
In this recipe I use a mixture of white and wholemeal self raising flour. The kids won’t notice the difference but it makes the scones full of fibre and protein. The blueberries not only sweeten the scones but they add that vibrant colour and adds a lovely texture too. It really takes the everyday scone to another level.
The best part is how quick and easy they are to make. Ill be the first one to put my hand up high and say Im not the best at baking. The first few years after we got together Joe had to put up with a lot of lop sided, slightly overcooked, not quite amazing cakes. “Its the oven” I would say to justify my lack of skill. These scones are rustic and are not meant to look perfect hence why I love them!
These beauties take under an hour to prepare and bake so they are perfect for when you are short on time but what to impress your guests. Or why not whip up a batch for the family on a lazy Sunday. Perfect with a pot of tea.
If fresh blueberries aren’t in season you can use frozen and because they defrost so quickly don’t worry about having to defrost them first. You can substitute blueberries for raspberries, blackberries or even other chopped fruit such as apple or pear. These scones even taste great on their own
What you will need for the blueberry scones
With only 8 ingredients blueberry scones are so easy and you probably have these ingredients already!
- I use a mixture of white and wholemeal self raising flour but if wholemeal flour isn’t your thing then you can just use white flour only.
- Baking powder this lightens the texture of the scones as well as helping them to rise.
- Caster sugar; you don’t need much in the recipe and if you prefer you can omit this as the blueberries give the scones some sweetness
- Pinch of salt to bring out the nuttiness of the wholemeal flour and as we use unsalted butter it allows us to control how much salt we are adding to the scones.
- Cold butter is used to rub into the flour and it gives the scones a beautiful richness
- My favourite ingredient in this recipe is the natural yoghurt. I love using yoghurt in baking. The acidity in the yoghurt will react with the baking powder helping the scones to rise.
- Blueberries, although they are the last ingredient they are the star of the show! adding vibrant colour, texture and sweetness. Plus they give the wow factor when the scones are cut open. Need I say more!
Serving your blueberry scones
Although they are delicious served just on their own still warm from the oven my favourite way to eat these scones is with some butter and my favourite jam made by Bonne Mamam

- goats cheese

Blueberry Scones
Ingredients
- 150 grams self-rasing flour
- 100 grams wholemeal self-raising flour
- 1 tsp baking powder
- 2 tbsp caster sugar
- pinch of salt
- 80 grams cold butter cut into cubes
- 260 grams plain natural yoghurt
- 125 grams blueberries fresh or frozen
- butter and jam for serving
Instructions
- Preheat oven to 200° or 180° fan forced Line a baking tray with baking paper
- Place the flours, baking powder, sugar and salt in a large bowk and mix until combined.
- Rub the butter into the flour until the mixture resembles fine breadcrumbs
- Add the yoghurt and mix well. Gently fold through the blueberries being careful not to burst them.
- Turn the dough onto a lightly floured surface and with floured hands gently form into a ball.
- Using a lightly floured rolling pin, roll the dough out to a 2.5cm thick square. Cut into 9 even pieces.
- Place scones on a baking tray and bake for 12-15 minutes or until golden
- To serve, split the scones in half and serve with butter and jam.
