You need this easy one bowl banana cake in your life. It’s hands down the best banana cake and the recipe that I come back to time and time again. Moist and delicious with a big hit of banana flavour. Dark chocolate and walnuts are folded through the batter to give a wonderful texture and flavour.

There are seriously thousands of banana cake recipes out there and I’ve definitely tried my fare share over the past 15 years or so. The reason I love this recipe so much is because not only is this banana cake moist and delightful but It’s incredibly easy to make.

This is usually my Sunday night cake as I make it in between dinner prep. My plan every week is to make this so we can enjoy it over the week but every week it never lasts past Sunday night. Sometimes I can sneak a slice with my morning coffee on Monday if I’m lucky. Most of the time though between myself, Joe and my three hungry kids the cake is devoured.

A staple in so many homes and with so many busy mums and dads out there I wanted to share a recipe that is easy and doable no matter what level of baking you are at.

Its totally yummy

AND

It has chunks of dark chocolate and walnuts! I rest my case.

It makes for a great dessert and a treat for eating up all your dinner. I also love to pack it for the kids in their yumboxes and Joe will take a slice to work for morning tea.

I’m a tea and cake kind of girl. My winding down treat, after the kids are all tucked in bed is a hot cup of tea, a slice of cake and curling up on the couch with Joe watching Netflix.

What is the difference between banana cake and banana bread

So what is the difference between banana cake and banana bread? Banana cake has a soft and moist crumb where as banana bread is a lot more dense and not as sweet. Banana bread is baked in a loaf tin and great for slicing and toasting and serving with butter.

What you will need

Ripe bananas

Vegetable oil

Eggs

Brown sugar

Vanilla bean paste

Cinnamon

Self raising flour

walnuts

Good quality dark chocolate, I use Lindt 70% cocoa

How to make banana cake

Preheat oven to 180°C (350°F).

Grease and line a 22cm cake tin with baking paper.

Place the bananas in a bowl and mash with a fork. Add the oil, eggs, sugar and vanilla and mix well to combine.

Add the flour and cinnamon and mix again combine.

Roughly chop the walnuts and chocolate and add to the bowl. Gently mix through.

Pour into cake tin and cook for 45 minutes or until a skewer comes out clean. Allow to stand in the tin for 5 minutes before turning out onto a wire wrack to cool completely.

Tips for making the best banana cake

Use over ripe bananas for a wonderfully soft and moist cake. The more spots the banana has the sweeter it is. It’s also going to be a lot easier to mash too.

Using dark brown sugar helps to keep the cake moist and also gives the cake a delicious caramel flavour.

This cake is totally delicious on It’s own but if you prefer you can serve it with a cream cheese frosting.

To make it look extra special you can also top with slices of banana. Gently push them into the batter before baking. It looks really pretty.

How to store banana cake

The cake will keep fresh and moist for 4-5 days. If the cake is not frosted it can be stored in an airtight container or a cake stand with a glass lid and left on your kitchen bench. If the cake is frosted then be sure to store it in the fridge.

Easy banana cake with dark chocolate and walnuts

This easy one bowl banana cake is super moist and delicious. dark chocolate and walnuts folded through the batter makes this cake extra yummy.

Ingredients

  • 4 ripe bananas
  • ½ cup vegetable oil
  • 3 eggs
  • 1 cup brown sugar
  • 1 tsp vanilla bean paste or vanilla extract
  • 2 tsp ground cinnamon
  • cups self-raising flour
  • ½ cup walnuts roughly chopped
  • 200 g good quality dark chocolate roughly chopped

Instructions

  • Preheat oven to 180°C (350°F).
    Grease a 22cm round cake tin and line with baking paper.
  • Place the bananas in a bowl and mash with a fork. Add the oil, eggs, sugar and vanilla and mix well to combine.
  • Add the flour and cinnamon and mix again to combine.
  • Lastly add the walnuts and chocolate and gently mix through.
  • Pour into prepared tin. Cook for 45 minutes or until a skewer comes out clean. Allow to stand in the tin for 5 minutes before turning out onto a wire wrack to cool completely.
