Daddy’s Favourite Almond cake!
This Delicious and easy almond cake recipe is Daddy’s favourite cake for good reason!
I discovered almond cake after I had my daughter Olive. I was looking for an easy cake recipe to make for family and friends when they came to visit.
So picture this, first time mum with my new baby. I had no idea what I was doing, I was feeding every few hours and the house was upside down. Sound familiar? So when everyone wants to visit it can be a little bit stressful.
This cake was my saviour and It’s now my husbands favourite cake!
It’s so easy to prepare and it’s one of those recipes that just turns out perfect every time! I’m not the most confident of bakers so for me this recipe is definitely a winner!
It was also our go to recipe after Jamie and William were borne. Joe’s only complaint is that now I never make it enough 😀
Is almond flour and almond meal the same thing?
It sure is! So if a recipe calls for almond flour or almond meal it literally meals finely ground almonds. This is so it resembles flour.
Almond meal is now widely available at health food stores and even at your local supermarket in the dried fruit and nut isle. I get it, almond meal is not cheap so in this recipe I use a mixture of almond meal and all purpose flour.
If you are wanting a gluten-free version then just replace the plain flour for extra almond meal.
What ingredients do I need?
What I love about this easy almond cake recipe is that the ingredients are so simple. I love the amazing smell of the cake brought on by just a few drops of Almond extract!
- Butter; I use unsalted, but if you only have salted don’t trouble yourself with another trip to the grocery store as you won’t notice the difference.
- Caster sugar: using caster sugar instead of regular granulated sugar gives the cake a lighter texture.
- Eggs
- Almond extract: This is available from your local supermarket. I use Queen natural almond extract it gives a wonderful rich almond flavour.
- Plain flour: If making a gluten-free almond cake then just replace this with extra almond meal.
- Baking powder: This is some magic that is sprinkled into your cakes to help them rise! I love using this in cakes because it also helps to lighten the texture.
- Almond Meal: Scroll up to find out a little bit more about almond meal. It gives the cake not only the delicious almond flavour but also brings a lovely texture.
- Milk: Full cream, fresh milk is best
- icing sugar for dusting
How to make almond cake
Preheat your oven to 160 degrees; this cake is cooked low and slow!
Grease a 20cm round cake tin and line with baking paper.
Cream butter and sugar on medium speed until pale and creamy.
Beat in eggs and almond extract until well combined.
Add flour, baking powder and almond meal and mix. Slowly add milk and mix well
Pour batter into the prepared cake tin and bake for 45-55 minutes. You will know Its ready when It’s firm to touch or when a skewer inserted comes out clean.
Leave in the tin for 10 minutes before turning out onto a wire rack to cool completely.
Dust with icing sugar 😋
Tips to making the perfect almond cake every time!
- Leave the butter on the kitchen bench and allow it to reach room temperature before beating it with the sugar. It will give you a creamier consistency and a smoother batter with no clumps.
- Using a combination of almond meal and almond extract gives you that rich almond taste and smell. It’s delicious!
- To prevent sticking and make removing the cake from the tin a breeze ensure you grease and line the cake tin with baking paper. Greasing the tin before lining it with the baking paper also stops the baking paper from slipping and sliding around as you pour in the batter.
- To keep the almond meal as fresh as possible, store it in an airtight container after opening.
The best part!!! licking the bowl and the beaters!! Just make sure they are turned off first!!! LOL

Easy Almond Cake
Ingredients
- 150 g butter softened
- 1 cup caster sugar
- 3 eggs
- 1 tsp almond extract
- 1 ½ cups plain flour
- 3 tsp baking powder
- 70 g almond meal
- ¾ cup milk
- icing sugar for dusting
