Our Family Favourite Chicken Pie

What makes the best chicken pie; Crispy puff pastry with creamy chicken and vegetable filling. Is there anything more comforting? This is one of those classic family favourite recipes that I go to time and time again. You are going to love it!

Perfect for entertaining or to get the family together at the dinner table this chicken pie is going to impress.

I have been cooking this recipe for over 20 so It’s been tried and tested hundreds of times and let me tell you it never fails!

The chicken pie filling is prepared on the stove top and then transferred to an oven dish, topped with puff pastry and finished off in the oven to get that amazing golden, flaky, crunchy pastry.

If you are after more comfort food I also love slow cooked lamb, creamy yellow curry and osso bucco.

Why this is our family favourite chicken pie recipe!

So lets start off with a bold statement My kids absolutely love this chicken pie! I think thats the main reason why this has been on our dinner menu at least once a month if not more, for so many years. We all know how tough it can be to get the kids to eat their vegetables. You will see in my recipe that I have taken full advantage of the above statement in ensuring the humble pie is filled with lots of nourishing vegetables.

Whats in this chicken pie?

  • Puff pastry; I use store bought because Jamie Oliver once said why spend all that time making it from scratch when store bought is just as good! That was enough for me!
  • Butter; I use butter instead of oil to cook the chicken and the vegetables to give the pie a richer taste
  • Chicken; The star of this dish. I use thighs as they are so juicy and full of flavour. Iv’e tried recipes using chicken breast but it tends to be quite dry.

  • Vegetables; I use leek (which is magic with chicken!) onion, celery, corn, carrot zucchini and mushrooms. You can add or omit vegetables as you please.
  • Chicken stock, this helps all the ingredients to cook away and not go dry. resulting in a juicy delicious filling.
  • Egg, is lightly beaten and brushed over the pastry to form a glaze. It helps the pastry to turn that beautiful golden colour without burning.
  • Sesame seeds: sprinkled over the top adds a nice extra bit of texture on the pastry

Tips to making an amazing chicken pie

  • Remember that the chicken will continue to cook in the oven so for tender juicy chicken cook it until its browned all over but not completely cooked through.
  • Prior to transferring your filling into the pie dish let it rest for 5 minutes so it cools slightly. Once you place the puff pastry on top you don’t want the butter in the pastry to melt as this will result in less of a puff in your puff pastry!

How to make chicken pie

Start by adding butter to a large fry pan on medium heat. Once bubbling, add thyme, garlic, leek, onion and celery and cook until translucent.

Next add chicken and cook for a few minutes before adding your veggies. You want the chicken to no longer be pink.

Add stock and bring to a gentle simmer. Stir through corn and your pie filling is done.

Before we can assemble the pie we need to let the filling cool. Remove from heat and set aside for at least 10 minutes.

Meanwhile line the base of a rectangle oven dish with half the quantity of the puff pastry.

Scoop in your pie filling and top with remaining pastry. Seal the edges together using your fingertips. 

Using a pastry brush, brush with the egg and sprinkle with sesame seeds. 

Place in your preheated oven and cook for 30 minutes or until pastry is puffed and golden.

serve the chicken pie with French style peas, Greek salad or rainbow salad

Ingredients
  

  • 20 g Butter
  • 3 Spring fresh thyme leaves picked
  • 2 Cloves garlic crushed
  • 1 Leek halved lengthwise and finely chopped
  • 1 Brown onion diced
  • 2 Sticks celery diced
  • 800 g Chicken thigh fillets
  • 2 Carrots peeled and diced
  • 1 Zucchini diced
  • 10 button mushrooms sliced
  • ½ cup chicken stock
  • 400 g corn kernels fresh or canned
  • 3 sheets puff pastry
  • 1 egg lightly beaten
  • 1 tbsp sesame seeds

Instructions
 

  • Preheat oven to 200°
    Heat butter in a large pan on medium heat.
  • Add thyme, garlic, leek, onion and celery and saute for 5 minutes
  • Next add chicken and cook for 5 minutes before adding the carrots, zucchini and mushrooms.
  • Add stock and bring to a simmer, reduce to low and cook for further 10 minutes.
  • Stir through corn. Remove from heat and set aside for 5 minutes to cool slightly.
  • Lightly grease a rectangular oven dish and line the base with half the quantity of the puff pastry.
  • Scoop in your chicken filling and then top with remaining pastry, sealing the edges together using your fingertips.
  • Brush with the egg and sprinkle with sesame seeds.
  • Place in your preheated oven and cook for 30 minutes or until pastry is puffed and golden.
