Fluffy Pancakes
Move over pre-made pancake mix, because these fluffy pancakes are going to change your life!
I know right, that is a BIG statement! But these pancakes are so good that I will eat them straight from the pan without adding a single drop of maple syrup!
Every Family needs a staple pancake recipe. In the Muccio family, pancakes symbolise celebrations; Birthdays, Christmas, Easter, losing a tooth…
I just made these the other day for my son William’s third Birthday. They are so easy to make though, that really, you don’t even need a special occasion.
Now that we are all spending more time at home I thought these are just too good not to share.
This is a no fail, fluffy pancake recipe!
I love hearing the giggles and excitement from the kids each time the pancakes are flipped!
Pancakes
Pancakes are a favourite for breakfast, brunch or breakfast-for-dinner. Loved by kids and adults alike they can be served as a sweet or savoury dish.
Ingredients for these fluffy pancakes are basic, staple ingredients which you most likely already have at home.
Whilst going for the pre made packet mix may seem more convenient. Really the most time consuming part is the cooking. So for an extra 5 minutes why not make your own home made pancakes from scratch. I promise you It’s worth it!
The pancakes may not be perfect in size and shape. It may start a pancake argument; too thick? too think? But these pancakes are fluffy and just the right amount of sweet.
Like I always say, start with the basics and then you can make it your own. If you like your pancakes smaller and thicker go for it! If you like your pancakes larger and thinner you can do that too.
I’ll admit that pancakes aren’t the healthiest breakfast. If you are looking for something a little bit healthier then you must try these yoghurt pancakes with passionfruit and coconut.
Every now and then you deserve a treat. So go on and treat yourself and your family.
What you need to make fluffy pancakes
As you can see there are 7 ingredients which are all staple pantry items. You most likely already have them on hand.
- Plain Flour
- Baking powder (This is the magic ingredient to getting your pancakes nice and fluffy!)
- Caster sugar
- Egg
- Milk
- Butter (Adding melted butter to the mix is what makes these pancakes so divine)
- Vanilla bean paste
How to make fluffy pancakes
Start by placing the dry ingredients in a large bowl and give it a good mix to break up any lumps.
In a jug add the egg, milk, melted butter and vanilla and whisk until well combined.
Make a well in the centre of the dry ingredients and carefully pour the wet mixture in the centre. Whisk well until everything is well combined and you have a smooth batter.
Heat butter in a large fry pan on medium heat. Once the butter starts to foam add 1/4 cup of the batter to the pan. For thicker pancakes make a smaller circle and for larger, thinner pancakes tilt the pan to allow the batter to spread out further.
Cook for 1-2 minutes on each side or until the pancake is golden. Once you see tiny bubbles appear the pancake is ready to be flipped.
You can flip the pancakes using a flipper or give it a try using the pan. It’s sure to get the kids excited.
Repeat with remaining batter. Serve the pancakes warm with your favourite toppings.
Tips for making the best fluffy pancakes
- Before adding the melted butter to the other wet ingredients allow to cool slightly so the egg mixture doesn’t curdle.
- Use a measuring cup to pour your batter into the pan that way all your pancakes are going to be roughly the same size.
- Once you see tiny bubbles appear the pancake is ready to be flipped.
- In a hurry? you can have 2 pans going on the stove to cook the batch faster.
- When my husband makes these pancakes he places all the ingredients in a blender and lets the blender do the whisking.
Pancake Toppings
One of the reasons why you don’t want your pancakes to be too sweet is because the sweetness will come from the toppings.
There are many different delicious topping combinations you can have and Ive shared some of my favourite to get you started 🙂
- Lemon and sugar (such a classic but so good)
- Banana and Nutella (my kids favourite)
- Peanut butter and banana (my husbands favourite)
- Fresh berries and icing sugar (my favourite)
- Butter and maple syrup
- Strawberries and fresh cream
- Berry compote
- Ice-cream and sprinkles
The recipe serves 4, or for us two adults and 3 pancake loving kids.

Oh my goodness I was so hungry for pancakes and these look soooo good!! BEtter yet, I have ALL the ingredients. Can I use regular white sugar ?

You sure can, caster sugar will just be a little easier on the arm as its a lot finer and easier to mix in. Just replace the same quantity of the caster sugar with regular sugar.
You caught me scrolling hungry. These look delicious! I’m definitely going to give them a try. Any recommendations for if I don’t have vanilla bean paste? Would extract work or is the paste critical?

Vanilla bean paste just has that thicker, richer consistency however Vanilla extract will also work. 🙂
