Porridge is such a wonderful, healthy and nutritious breakfast. Once you have mastered this porridge recipe you can create so many delicious combinations.

I started cooking porridge for the first time around 7 years ago when I introduced solids to my daughter. The first few times it was literally boiled oats and so it was pretty bland. Over time I started experimenting with different fruits, nuts and seeds and I have since created what I believe to be the perfect porridge recipe.

Now my kids still look forward to their Saturday morning porridge and always ask for seconds and thirds. This is one of our staple weekend breakfasts along with my yoghurt pancakes.

Perfect Porridge

Porridge also known as oatmeal is commonly made with oats and served warm. Traditional porridge is made by boiling oats with water and or milk until the oats have softened and turn into a creamy thick sludge like consistency.

A classic winter breakfast, I love how porridge warms you up from the inside out. Its also delicious in Summer served at room temperature with fresh seasonal berries. I guess you could say that you can pretty much enjoy porridge year round 🙂

These days breakfast cereals are packed with so much added sugars and salts. Whenever possible I like having some control over what they eat for breakfast and what goes in it.

Making porridge yourself is also budget friendly as oats are so affordable compared to the pre packaged sachet varieties.

All about Oats

Oats come in different forms with the most popular being rolled oats and quick oats.

Rolled oats are rolled whole grain oat kernels where as quick oats are first cut into smaller pieces before being rolled. Quick oats cook a lot faster but the end result is a more mushier consistency.

Instant oats are also available and cooks even faster than quick oats as they are partially boiled then dried and packaged.

Eating porridge for breakfast is a good source of fibre, protein and many vitamins and minerals. Oats are also low in calories.

According to healthline.com oats can lower cholesterol and improve blood sugar levels.

The great thing about oats is that they leave you feeling fuller for longer which is great for fuelling your little ones tummies.

Topping ideas

In my recipe I use apple, pear, banana and blueberries along with a pinch of cinnamon and cardamon. Then I serve the porridge with toasted nuts and a drizzle of honey.

Once you have the basic porridge recipe down pat there are hundreds of different flavour combinations for you to play around and have fun with.

Experiment with different nuts, seeds and fresh and dried fruits.

What you will need to make perfect porridge

Simple ingredients are all you need to make the perfect porridge! Feel free to add or change the fruit, nuts or spices.

  • Rolled oats
  • Sultanas or raisins
  • Ground cinnamon and cardamon
  • Boiling water (this helps speed up the cooking process)
  • Vanilla bean extract
  • Apple, pear, banana, fresh blueberries
  • Full cream milk
  • Toasted almonds
  • Honey

How to make this perfect porridge recipe

In a medium size saucepan add the oats, sultanas and boiling water. let it sit for 5 minutes or until the water has been absorbed. This process will soften the oats and sultanas as well as shorten the overall cooking time.

Add vanilla, spices, fruit and milk and cook on medium heat. Once simmering reduce heat to low and cook for 15 minutes. Stir frequently to stop the porridge from sticking to the bottom of the pan.

The porridge is ready when the oats have a creamy consistency and the banana has melted into the porridge.

Dish up into bowls and serve with a drizzle of honey and the toasted almonds.

How long will porridge keep?

Porridge isn’t the most quickest breakfast to make and so when I make porridge on the weekend I love to make a big batch. That way I have it ready to go for the kids for the week ahead. All I need to do is re-heat it.

Porridge will keep in the fridge for up to 5 days. Once cooled, store the porridge in an airtight container. When ready to serve reheat the porridge on the stovetop or microwave. You may need to add some extra milk or water when cooking.

Ingredients

  • 2 cups Rolled oats
  • ½ cup sultanas
  • 500 ml Boiling water
  • 1 tsp Vanilla bean extract
  • 2 tsp ground cinnamon
  • ¼ tsp ground cardamon
  • 1 apple peeled, cored and grated
  • 1 pear peeled, cored and grated
  • 2 bananas peeled and roughly chopped
  • ½ cup blueberries fresh or frozen
  • 2 cups milk plus extra if needed
  • ¼ cup flaked almonds lightly toasted
  • honey to serve
