Introducing your new best friend; Healthy grilled chicken burgers. Oh yeah baby! Im talking Juicy and tender grilled chicken breast in a crunchy, fresh bun with smashed avocado and all the trimmings.
They say a picture says a 1000 words but every time I see this heavenly burger my mind can only think of two words “EAT ME.” Okay maybe 6 words, “PICK ME UP AND EAT ME”
This is a great recipe to have up your sleeve when you have a crowd to feed because they are always a hit! They are healthy, delicious and so easy to put together!!

Grilled Chicken burgers
This is one burger to get excited about because Im not talking about just any chicken burger. In fact forget everything you know about chicken burgers. Wipe the slate clean because this is tender, juicy chicken breasts seasoned to perfection with herbs and spices.
It’s then cooked just right so your not going to be left with dry chicken. Every bight is going to be like OMG.
Come to think of it I don’t know why I haven’t introduced you all to this recipe sooner. I sincerely apologise.
The best part is after eating these burgers you don’t have that guilty, sluggish feeling you normally get from easting a fast food burger. I love how fresh and healthy they are. I’m betting you will too.

Everything you need to know about perfecting chicken burgers
First things first you need a good quality griddle pan. At home I use the Le Creuset cast iron griddle pan. I’ve had it for over ten years now and it was such a good investment. It’s great for grilling steak, chicken and fish but I also use mine for grilling bread and veggies too.
Make sure the griddle is nice and hot before you cook your chicken. If you don’t get that sizzle when you place the chicken on the grill it’s not hot enough. This ensures even cooking and seals in all those lovely juices.
Using olive oil along with the spices to rub into the chicken helps to prevent the chicken sticking to the grill and burning.
Ensure you don’t over cook the chicken because chicken breast will go dry if overcooked. The chicken is cooked when a knife is inserted into the thickest part and the juices run clear. You can also touch the chicken and if it feels firm that’s a good sign it’s ready.
What you will need
Chicken Breasts
Olive Oil
Ground Cumin
Ground Coriander
Dried Oregano
Salt & Pepper
Lemon Zest; for best results use a zester
Burger Buns
Avocado
Cheddar Cheese
Red Onion
Iceberg Lettuce
How to make the best grilled chicken burgers
Halve the chicken breasts and place in a bowl with the olive oil, spices and the lemon zest and rub all over until the chicken is evenly coated.
Heat your griddle pan or BBQ. Once hot, cook chicken for about 4 minutes on each side or until cooked through. Transfer to a plate, cover with foil and allow to rest for 5 minutes.
Slice open your burger buns and prepare your burger toppings; smash the avocado with a little olive oil, salt and pepper. Slice the tomato and thinly slice the red onion.
To assemble the chicken burgers layer the buns with lettuce, grilled chicken, tomatoes, onion, avocado and cheese.

Instructions

OK I cannot wait to try this! I love ordering chicken burgers when I eat out but I’ve never dared brave making one at home because I hate chicken that’s too dry with a passion. You can’t beat a tasty and healthy meal .
